WHere is a simplified take on a beverage from the seasonal menu. It's a large-volume prepared mix that is bursting with the essence of a holiday season, making it excellent for hosting a festive gathering. Reserve the remaining citrus syrup to use in breakfast cocktails, desserts, or to mix another batch of this cocktail.
Bikini Recipe
Yields 10 servings
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Combine every ingredients in a pan, heat until it reaches a simmer, agitating so the sugar melts. Next, take off the stove and let it to cool down entirely. Pour into a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for up to a month.
To make Batch Mix: Pour every spirits and syrup into one large bottle, let it rest for one hour, then strain , ideally through muslin, making it perfectly clear.
For serving: Pour 85ml of the premix into a stirring glass containing ice, and stir gently for one minute to cool it down. Filter into an frosted cocktail glass or equivalent, garnish with some cranberries and complete it by giving it a brief mist of the essential oil above the glass.
